As promised here is the recipe for pickled pears.

1 KG hard pears

juice of 2 lemons

675 g demerera sugar

1 litre cider vinegar

250 mls water

3 cinnamon sticks

3 star anise

1 tps black peppercorns

1tsp whole allspice

Peel the pears and toss in lemon juice

Place in a large saucepan with remaining ingredients and bring to the boil.

Reduce the heat to a simmer and cook until the pears are nearly tender, which should take approx 45 minutes.

Spoon the pears into sterilized  jars and cover with syrup.

Seal immediately.
